Fairy Cakes

Ingredients

Butter - 110g (Room temperature)
Caster sugar – 110g
Eggs - 2
Vanilla extract - 1 tsp
Self-raising flour - 110g
Milk - 1-2 tbsp
Icing sugar – Your choice amount
Fairy sprinkles

Method

Preheat the oven to 180 C.
Line a 12 hole cupcake tin with paper cases.
Mix together the caster sugar and butter until it’s really creamy.
Add the eggs and mix.
Add vanilla extract.
Sieve the flour into the mixture and mix really well.
Add a little drop of milk to the mixture to help with mixing.
Spoon the mixture evenly into the cupcake holders.
Bake for 10 – 15 minutes until golden.
Transfer to a wire rack to cool for about 10 minutes
Mix the icing sugar with a little hot water and add a little vanilla extra to taste.
Once cooled, add the icing and sprinkle with… fairy sprinkles!
