Corn Fritters

Ingredients

Eggs - 1
Dried coriander - 1/4tsp
Natural yoghurt - 5tbsp
Polenta - 65g
Sweetcorn - 1 tin
Coconut oil

Method

Beat the eggs and coriander.
Beat in natural yoghurt.
Stir in polenta and then the sweet corn.
Heat the oil on a pan.
Drop a spoonful of the batter on the heated pan.
Flip the fritter when golden brown on the bottom side.
Remove from the pan once both sides are golden.
