Chicken Goujons

Ingredients

Breadcrumbs - 125g
Skinless chicken breasts - 4
Plain flour - 50g
Eggs - 3
Vegetable oil - 2 tbsp
Grated Cheese - 50g

Method

Preheat the oven to 190C.
Oil two baking trays with vegetable oil.
Mix the breadcrumbs, salt, pepper & cheese in a shallow bowl - place the flour in another shallow bowl.
Cut the chicken into pieces.
Beat the eggs.
Dip the chicken pieces in flour, then in the beaten eggs and finally coat in the breadcrumbs.
Drizzle more vegetable oil all over the goujons.
Bake in the oven for 30-35 minutes, turning once.
Remove from the oven when completely cooked through and golden-brown all over.
