Bircher Muesli

Ingredients

Oatmeal - 225g
Cream - 200ml
Fresh apple juice - 150ml
Natural plain yoghurt - 150ml
Clear honey - 2 tbsp
Vanilla extract - 1 tsp
Granny Smith apple - 1

For the granola topping:

Mixed seeds - 100g
Maple syrup - 2 tbsp
Flaked almonds - 25g

Method

Mix the oats in a large bowl with the cream, apple juice, yoghurt, honey and vanilla extract.
Remove the core and grate the apple into the oat mixture.
It’s important to keep the mixture quite wet.
To serve, divide the muesli among glasses and scatter the granola on top, garnish/serve with fresh fruit.


Granola:
Place the seeds into a bowl and drizzle in the maple syrup, stirring continuously until evenly combined.
Drip the mix onto a Swiss roll tin and spread out evenly.
Place under the grill for 8-10 minutes until lightly golden.
Add the flaked almond, stir and cook for a further 5-10 minutes until lightly golden.
Stir occasionally to prevent the edges from overheating.
Remove and leave to cool and harden.
